White lilies are a traditional symbol of the Hereafter. Offering them to the goddess shows her that despite the passage of time, we still remember what she did for us.

Everyone alive today is descended from the people Nui saved. She used the Hereafter as a portal to take them to safety. It was as if they were born again into a new world. Like we're all her children.
